A traditional Ghanaian dish featuring fermented corn dough served with grilled tilapia fish.
Ingredients
2 cups corn flour
1 cup cassava flour
1 cup warm water
2 tilapia fish
2 onions, sliced
2 tomatoes, sliced
2 scotch bonnet peppers
Salt to taste
Palm oil for frying
Instructions
1. Mix corn flour and cassava flour with warm water to form a smooth dough
2. Let the dough ferment for 2-3 days in a warm place
3. Cook the fermented dough in a pot, stirring continuously until it forms a smooth paste
4. Clean and season the tilapia with salt
5. Grill the fish until cooked through
6. Serve banku with grilled tilapia, onions, tomatoes, and pepper
