About this Recipe
Traditional South African dried meat, similar to jerky but with unique spices.
Ingredients
2 lbs beef (sirloin or silverside)
1/2 cup brown sugar
1/2 cup salt
2 tbsp black pepper
2 tbsp coriander seeds, crushed
1 tbsp paprika
1/2 cup vinegar
Instructions
1. Cut meat into strips along the grain
2. Mix all spices and vinegar to make marinade
3. Coat meat thoroughly with marinade
4. Refrigerate for 24 hours, turning occasionally
5. Hang meat in a well-ventilated area
6. Dry for 3-5 days until firm but not hard
7. Store in airtight container
