About this Recipe
A rich Nigerian soup made with ground melon seeds and leafy vegetables.
Ingredients
1 cup ground egusi (melon seeds)
2 cups spinach or bitter leaf
1 lb meat (beef, goat, or fish)
2 onions, chopped
2 scotch bonnet peppers
2 tbsp palm oil
2 tbsp ground crayfish
1 tsp ground pepper
Salt to taste
Instructions
1. Cook meat with onions and spices until tender
2. Add palm oil and heat for 2 minutes
3. Add ground egusi and stir well
4. Add meat stock and simmer for 15 minutes
5. Add vegetables and cook for 5 more minutes
6. Adjust seasoning and serve with pounded yam or eba
