A beloved West African rice dish cooked in a flavorful tomato-based sauce. This iconic dish is a staple at Nigerian parties and celebrations.
Ingredients
Long grain rice - 3 cups
Tomatoes - 6 medium
Red bell peppers - 2
Scotch bonnet peppers - 2 (adjust to taste)
Onions - 2 large
Chicken stock - 3 cups
Curry powder - 1 tablespoon
Thyme - 1 teaspoon
Bay leaves - 2
Vegetable oil - 1/2 cup
Salt and pepper to taste
Instructions
1. Blend tomatoes, red peppers, and scotch bonnets until smooth
2. Heat oil in a large pot and fry onions until translucent
3. Add blended mixture and cook down until oil floats to top (about 15 minutes)
4. Add curry powder, thyme, bay leaves, and season with salt and pepper
5. Pour in chicken stock and bring to a boil
6. Add washed rice, stir, and reduce heat
7. Cover and cook on low heat until rice is tender (about 30 minutes)
8. Turn off heat and let steam for 10 minutes before serving
