Ingredients

2 lbs beef ribs or goat meat 4 cloves garlic, minced 2 inches ginger, grated 1 tsp black pepper 1 tsp salt 2 tbsp vegetable oil 2 onions, sliced 2 tomatoes, diced 1 cucumber, diced 2 tbsp lemon juice Fresh coriander, chopped

Instructions

1. Marinate meat with garlic, ginger, pepper, and salt for 2 hours 2. Grill meat over charcoal or open flame for 30-40 minutes 3. Turn occasionally and baste with oil 4. For kachumbari: mix onions, tomatoes, cucumber, lemon juice, and coriander 5. Serve hot with ugali and kachumbari on the side
